Soak the Rice
In a large bowl, combine the rice and 2 cups of water. Let it soak for at least 4 hours or overnight.

Blend the Mixture
After soaking, drain the rice and add it to a blender with the cinnamon sticks and 2 cups of fresh water. Blend until the rice is finely ground.

Strain the Rice Mixture
Pour the blended mixture through a fine-mesh sieve or cheesecloth into a pitcher. Press down to extract as much liquid as possible.

Chill and Serve
Refrigerate the horchata for at least 1 hour. Serve over ice in a 24oz cup.
