Marinating the Pork

    Prepare the Marinade

    In a blender, combine pineapple juice, guajillo peppers, ancho peppers, garlic cloves, cumin, oregano, salt, black pepper, white vinegar, and chipotle in adobo. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into chunks and place it in a large bowl. Pour the marinade over the pork, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat your grill or stovetop grill pan over medium-high heat. Remove the pork from the marinade and grill for 4-5 minutes per side until fully cooked and slightly charred. Let it rest for a few minutes before slicing.

Assembling the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Slice the grilled pork into thin strips. Place a portion of pork on each tortilla, top with diced pineapple, chopped cilantro, and diced onion. Serve with lime wedges on the side.
