Filling Preparation

    Prepare the Filling

    In a large mixing bowl, combine the shredded chicken, shredded cheese, chopped onion, cilantro, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Sauce Preparation

    Make the Sauce

    In a saucepan over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant. Then, add the enchilada sauce and simmer for 5 minutes, stirring occasionally. Remove from heat and set aside.

Assembly

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). Take one corn tortilla, place a generous amount of the filling in the center, then roll it up tightly. Place the rolled tortilla seam-side down in a baking dish. Repeat with the remaining tortillas and filling.

    Add Sauce and Bake

    Pour the prepared enchilada sauce evenly over the assembled enchiladas in the baking dish. Make sure to cover them well. Sprinkle any extra cheese on top if desired. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

    Remove the enchiladas from the oven, let them cool for a few minutes, then serve hot garnished with additional cilantro if desired.
