    Prepare the Marinade

    In a large bowl, combine pineapple juice, achiote paste, minced garlic, cumin, oregano, salt, black pepper, and lime juice. Mix well until the achiote paste is fully dissolved.

    Marinate the Pork

    Cut the pork shoulder into small chunks and add it to the marinade. Make sure the pork is well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off. Cook the pork pieces for about 8-10 minutes on each side or until fully cooked and slightly charred. For added flavor, you can also add some pineapple slices to the grill.

    Rest and Slice

    Once cooked, remove the pork from the heat and let it rest for 5 minutes. Then, thinly slice the pork against the grain.

Assembling the Tacos

    Warm the Tortillas

    While the pork is resting, warm the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side or until pliable.

    Assemble the Tacos

    Place slices of pork on each tortilla. Top with diced pineapple, onion, cilantro, and radishes. Serve with lime wedges on the side.
