Cook the Chorizo
In a medium skillet over medium heat, add the chorizo and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

Melt the Cheese
In a large mixing bowl, combine the Chihuahua cheese, mozzarella cheese, Monterey Jack cheese, and cream cheese. Mix until well combined.

Combine with Chorizo Mixture
Add the chorizo and vegetable mixture to the cheese blend, stirring until evenly distributed.

Bake the Queso Fundido
Preheat your oven to 375°F (190°C). Transfer the cheese mixture to an oven-safe dish and spread evenly. Bake for 15-20 minutes, or until the cheese is melted and bubbly.

Prepare the Tortillas
While the cheese is baking, warm the corn tortillas in a skillet over low heat for a few seconds on each side until soft and pliable.

Once the queso is melted and bubbly, remove from the oven. Garnish with chopped cilantro and serve immediately with warm tortillas.
