Prepare the chiles
Remove the stems and seeds from the dried guajillo and ancho chiles. Place them in a pot with enough water to cover them and bring to a boil. Once boiling, reduce heat and simmer for about 10 minutes or until softened. Drain and set aside.

Blend the marinade
In a blender, combine the softened chiles, garlic cloves, pineapple juice, white vinegar, cumin, oregano, salt, black pepper, sugar, and bay leaves. Blend until smooth.

Marinate the pork
Cut the pork shoulder into small chunks and place them in a bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Warm the tortillas
In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the tacos
Place a few slices of the cooked pork on each tortilla. Top with diced pineapple, chopped cilantro, and finely chopped onion. Serve with lime wedges on the side.
