Steak Preparation

    Marinate the Steak

    In a bowl, combine the skirt steak with olive oil, garlic powder, cumin, salt, and black pepper. Make sure the steak is well coated in the marinade. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated skirt steak. Grill for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let rest for 5 minutes before slicing.

    Slice the Steak

    Using a sharp knife, slice the grilled steak against the grain into thin strips.

    Warm the Tortillas

    In a dry skillet over medium heat, warm each corn tortilla for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Take a warm tortilla and place a portion of the sliced steak in the center. Top with diced onion and chopped cilantro. Squeeze fresh lime juice over the top to add flavor.

    Serve

    Serve the tacos immediately with extra lime wedges on the side for additional flavor.
