Preparation of Filling

    Cook the Filling

    In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.

    Combine Filling Ingredients

    Add the cooked shredded chicken or beef, chopped cilantro, and half of the shredded cheese to the skillet. Mix well and season with salt and ground cumin. Cook for another 2-3 minutes until heated through.

Assembly

    Prepare the Tortillas

    Preheat the oven to 375°F (190°C). In a separate bowl, pour half of the enchilada sauce. Dip each corn tortilla in the sauce to coat.

    Fill the Tortillas

    Place a generous amount of the filling in the center of each tortilla, then roll it up tightly. Place the rolled tortillas seam side down in a greased baking dish.

Baking

    Top with Sauce

    Once all the tortillas are in the baking dish, pour the remaining enchilada sauce over the top. Sprinkle the rest of the shredded cheese evenly over the sauce.

    Bake Enchiladas

    Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Serving

    Serve Hot

    Remove from oven and let cool for a few minutes before serving. Garnish with additional cilantro if desired.
