Raisin Infusion Process

    Combine infusion ingredients

    In a clean glass jar with a tight-fitting lid, add 750 ml tequila Blanco, 0.5 cup raisins, 2 tsp orange zest, 1 vanilla bean (split), and 1 cinnamon stick. Ensure all ingredients are submerged.

    Seal the jar and store in a cool, dark place for 5-7 days. Gently swirl the jar once per day to help extract flavors.

    After infusion, strain the mixture through a fine-mesh sieve or cheesecloth into a clean bottle, discarding solids. If a smoother result is desired, strain a second time through a coffee filter.

    Let the strained infusion rest for 12-24 hours to mellow. Taste and, if desired, reinvigorate the flavor by returning the solids to the tequila for an additional 1-2 days, repeating the infusion process if needed.

    Store the finished pasita in a sealed bottle at room temperature. It can be enjoyed neat, on the rocks, or used to elevate cocktails like raisin tequila-based drinks.
