Chipotle Pork Ribs Recipe

6 lbs. back ribs cut into 2 rib sections seasoned with salt and pepper24 Tomatillos8 Cloves garlic5 Chipotle chiles4 Cups water2 Tsp salt2 Tsp pepperSear the ribs on all sides. Meanwhile in a dry skillet roast the tomatillos until browned and the garlic until lightly toasted. Place the tomatillos, garlic, chipotle chiles, water, salt and pepper in a blender and purée. Pour over the seared ribs in a pan, cover and bake at 350° for two hours or until tender.

    Season the 6 lbs back ribs with salt and pepper. Sear the ribs on all sides in a heavy skillet or Dutch oven over medium-high heat until browned. Remove from pan and set aside.

Aromatics, purée, and bake

    In a dry skillet, roast the tomatillos until browned and the garlic until lightly toasted to deepen their flavor.

    In a blender, combine the roasted tomatillos, roasted garlic, chipotle chiles, water, salt, and pepper. Purée until smooth.

    Return the seared ribs to a pan and pour the puréed sauce over them. Cover and bake at 350°F for 2 hours, or until the ribs are tender.
