Chicken Filling

    Prepare chicken

    Shred the smoked chicken until fine shreds and set aside.

    Sauté aromatics

    Heat olive oil in a skillet over medium heat. Add onion and sauté until translucent, 4–5 minutes.

    Add garlic

    Stir in minced garlic and cook until fragrant, about 30 seconds.

    Combine filling

    Add shredded chicken to the skillet, season with a pinch of salt, and cook 2–3 minutes to mingle flavors.

Salsa Verde

    Cook greens

    In a pot, simmer tomatillos, jalapeños, and garlic in a splash of water for 10–12 minutes until soft.

    Blend

    Carefully transfer the simmered vegetables to a blender. Add cilantro and lime juice; blend until smooth. If needed, thin with a little extra water.

    Season

    Season with salt; blend briefly to combine; adjust to taste.

Chipotle Crema

    Whisk crema

    In a bowl, whisk together sour cream, mayonnaise, minced chipotle peppers, adobo sauce, and lime juice.

    Season and chill

    Season with salt. Refrigerate for at least 15 minutes to let flavors meld.

Enchiladas Assembly

    Prep tortillas

    Warm the corn tortillas briefly to make them pliable (a few seconds on a hot dry skillet or in the microwave).

    Layer bottom

    Spread a thin layer of salsa verde on the bottom of a baking dish.

    Fill and roll

    For each tortilla, spoon about 2–3 tablespoons of chicken filling and a pinch of cheese. Roll tightly and place seam-side down in the dish.

    Add toppings

    Continue filling and rolling until all tortillas are used. Spoon additional salsa verde over the top and sprinkle with remaining cheese.

    Finish with crema

    Drizzle chipotle crema over the enchiladas and sprinkle with chopped cilantro.

Bake and Finish

    Bake

    Preheat oven to 375°F (190°C). Bake the enchiladas for 20–25 minutes, until cheese is melted and bubbly.

    Serve

    Let stand 5 minutes before serving. Serve with extra salsa verde or crema if desired.
