Marinated Pork Preparation

    Prepare Marinade

    In a bowl, combine pineapple juice, achiote paste, minced garlic, ground cumin, oregano, salt, and black pepper. Whisk until well combined.

    Marinate Pork

    Place the thinly sliced pork shoulder in a large resealable bag or bowl. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook Pork

    Heat vegetable oil in a large skillet or grill over medium-high heat. Remove the pork from the marinade and cook for about 3-4 minutes on each side, or until fully cooked and slightly charred. Remove from heat and let it rest for a few minutes.

    Slice Pork

    Once rested, slice the pork into thin strips for easy taco assembly.

    Warm Tortillas

    In the same skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

    On each tortilla, add a portion of the sliced pork, followed by diced pineapple, chopped onion, and cilantro.

    Serve tacos immediately with lime wedges on the side for squeezing over the tacos.
