Method
Dough Preparation
- 1
Mix Dry Ingredients
In a mixing bowl, combine 2 cups of all-purpose flour, 1 tsp of baking powder, and 1 tsp of salt. Whisk them together until evenly mixed.
- 2
Add Shortening
Add 2 tbs of shortening or lard to the dry ingredients. Use your fingers or a pastry cutter to blend it until the mixture resembles coarse crumbs.
- 3
Incorporate Water
Gradually add 3 tbs of warm water to the mixture, stirring until the dough comes together. You may need to add a little more water if the dough feels too dry.
- 4
Knead the Dough
Transfer the dough to a lightly floured surface and knead it for about 5 minutes until it is smooth and elastic.
- 5
Rest the Dough
Cover the dough with a clean kitchen towel and let it rest for about 30 minutes.
Frying
- 6
Heat Oil
In a large, deep skillet, heat 2 cups of vegetable oil over medium-high heat. It should be hot enough that a small piece of dough sizzles when dropped in.
- 7
Roll Out Dough
After resting, divide the dough into 6 equal pieces. Roll each piece out on a floured surface to about 1/8 inch thick.
- 8
Cut and Fry
Cut the rolled dough into squares or diamonds. Carefully place them into the hot oil, frying a few at a time. Fry for about 2-3 minutes on each side until they puff up and are golden brown.
- 9
Drain Excess Oil
Use a slotted spoon to remove the sopapillas from the oil and drain them on paper towels.
