Method
Tacos
- 1
Prepare the Meat
In a skillet over medium heat, brown the ground beef or shredded chicken until fully cooked. Drain excess fat if using ground beef.
- 2
Season the Meat
Add taco seasoning to the meat, along with 1/4 cup of water. Stir well and let simmer for about 5 minutes until the sauce thickens.
- 3
Warm the Tortillas
While the meat is cooking, warm the tortillas in a separate skillet for about 30 seconds on each side, or until soft and pliable.
- 4
Assemble the Tacos
Place a portion of the seasoned meat in the center of each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and sliced jalapeños if desired.
Rice and Beans
- 5
Cook the Rice
In a saucepan, combine the white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is cooked and water is absorbed.
- 6
Heat the Beans
In a small pot, heat the canned black beans over medium heat. Add chili powder and salt to taste. Stir occasionally until warmed through, about 5 minutes.
- 7
Serve Together
Once the rice is cooked and beans are heated, serve them alongside the tacos on the plate.
