Method
Prepare the Filling
- 1
Chop and Mix
Chop the fresh strawberries into small pieces. In a mixing bowl, combine the chopped strawberries, granulated sugar, cornstarch, lemon juice, and ground cinnamon. Toss gently to coat the strawberries evenly with the mixture.
- 2
Let it Sit
Allow the mixture to sit for about 10 minutes to let the strawberries release their juices and the sugar dissolve.
Assemble the Chimichangas
- 3
Fill the Tortillas
Place a flour tortilla on a clean surface. Spoon about 1/4 cup of the strawberry filling onto the center of the tortilla.
- 4
Fold and Roll
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top, sealing the edges. Repeat with the remaining tortillas and filling.
Fry the Chimichangas
- 5
Heat the Oil
In a large skillet, heat the butter or oil over medium-high heat until hot.
- 6
Fry the Chimichangas
Carefully place the rolled chimichangas seam-side down in the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side.
- 7
Drain
Once fried, remove the chimichangas from the oil and let them drain on paper towels to remove excess oil.
Serve
- 8
Plate and Garnish
Place the fried chimichangas on a serving plate. Dust with powdered sugar and serve warm with whipped cream on the side.
