Dough Preparation

    Mix Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk together to ensure all dry ingredients are well mixed.

    Incorporate Shortening

    Add the shortening (or lard) to the flour mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add the warm water to the mixture while stirring with a fork until it forms a soft dough.

    Knead Dough

    Turn the dough onto a lightly floured surface and knead for about 2-3 minutes until smooth and elastic.

    Rest Dough

    Cover the dough with a clean kitchen towel and let it rest for at least 30 minutes at room temperature.

Frying

    Heat Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball out into a circle about 1/8 inch thick.

    Fry Sopapillas

    Carefully place the rolled dough into the hot oil. Fry for about 2-3 minutes on each side until they puff up and turn golden brown. Remove from oil and drain on paper towels.
