    Cook the Beef

    In a large pot or Dutch oven, place the chuck roast and add the beef broth, chopped onion, minced garlic, ground cumin, chili powder, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 3-4 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and let it rest for a few minutes. Use two forks to shred the beef into bite-sized pieces. Return the shredded beef to the pot and mix it with the remaining juices.

Enchilada Assembly

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Tortillas

    In a skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

    Assemble the Enchiladas

    Spread a thin layer of red enchilada sauce on the bottom of a 9x13 inch baking dish. For each tortilla, place a small amount of shredded beef and a sprinkle of cheese in the center, roll it tightly, and place it seam side down in the baking dish. Repeat this process until all tortillas are filled.

    Add Sauce and Cheese

    Once all enchiladas are assembled, pour the remaining enchilada sauce over the top. Sprinkle the remaining cheese over the sauce.

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

    Remove from the oven and let cool for a few minutes. Top with sour cream and chopped cilantro before serving.
