Preparation

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo sausage, breaking it apart with a spatula until fully cooked and browned, about 5-7 minutes. Drain excess fat and set aside.

    Prepare the Cheeses

    In a large mixing bowl, shred the Oaxaca and Monterey Jack cheese. Cube the cream cheese into small pieces for easy melting.

    Melt the Cheeses

    In a large skillet or cast iron pan, combine the shredded Oaxaca cheese, Monterey Jack cheese, and cubed cream cheese. Place the skillet over low heat and stir continuously until the cheeses melt and become creamy, about 8-10 minutes.

    Add the Chorizo

    Once the cheese is melted, stir in the cooked chorizo until evenly distributed throughout the melted cheese mixture. Cook for an additional 2-3 minutes.

    Prepare Tortillas

    While the cheese and chorizo are cooking, warm the corn tortillas in a separate skillet over medium heat for about 30 seconds on each side until soft and pliable.

    Serve the Queso Fundido

    Transfer the queso fundido to a serving dish. Top with chopped cilantro, sliced jalapeños, and diced tomatoes. Serve immediately with warm corn tortillas for dipping.
