Preparation of Filling

Cook the Meat
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Assembling Enchiladas

Prepare Tortillas
Preheat your oven to 375°F (190°C). In a separate pan, lightly warm the corn tortillas over medium heat to make them pliable, about 30 seconds per side.

Stuff the Tortillas
Spoon a generous amount of the beef mixture onto the center of each tortilla. Roll the tortillas tightly around the filling and place seam-side down in a baking dish.
Adding Sauce and Baking

Top with Sauce
Pour half of the enchilada sauce evenly over the rolled tortillas. Sprinkle the shredded cheese on top of the sauce.

Bake the Enchiladas
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Serving

Garnish and Serve
Once out of the oven, let the enchiladas cool for 5 minutes. Serve topped with the remaining enchilada sauce, sour cream, chopped cilantro, and sliced jalapeños.
