Chile Relleno

Prepare the Peppers
Roast the poblano peppers over an open flame or under a broiler until the skin is blistered and blackened. Place them in a plastic bag for 10 minutes to steam, then peel off the skin. Make a slit down the side of each pepper and remove the seeds.

Stuff the Peppers
Stuff each pepper with cheddar cheese, being careful not to overfill.

Fry the Peppers
Heat vegetable oil in a frying pan over medium heat. Dip each stuffed pepper into the batter and fry until golden brown on all sides. Remove and drain on paper towels.

Serve with Sauce
Serve the fried chile rellenos topped with warm tomato sauce.

Cook the Rice
Add the long-grain rice to the saucepan and stir to coat with oil. Add water and salt, and bring to a boil.

Simmer
Reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.

Fluff and Serve
Remove from heat, fluff with a fork, and let it sit covered for 5 minutes before serving.
