Method
Preparation
- 1
Mix Dry Ingredients
In a large mixing bowl, combine the corn flour (masa harina) and salt. Stir well to ensure the salt is evenly distributed throughout the flour.
- 2
Add Water
Gradually add the water to the dry mixture, stirring continuously with a wooden spoon or your hands until a dough begins to form.
- 3
Knead the Dough
Once the dough comes together, knead it in the bowl or on a clean surface for about 2-3 minutes until it is smooth and slightly elastic. If the dough feels too dry, add a little more water, a tablespoon at a time.
- 4
Rest the Dough
Cover the dough with a damp cloth or plastic wrap and let it rest for about 30 minutes. This helps to hydrate the flour and make the tortillas more pliable.
Cooking
- 5
Divide the Dough
After resting, divide the dough into 10-12 equal portions. Roll each portion into a ball.
- 6
Flatten the Tortillas
Using a tortilla press or a rolling pin, flatten each ball into a round tortilla, about 6-8 inches in diameter. Make sure to keep the thickness even.
- 7
Cook the Tortillas
Heat a dry skillet or griddle over medium-high heat. Once hot, place one tortilla in the skillet and cook for about 30 seconds, or until you see bubbles forming. Flip the tortilla and cook for another 30 seconds. The tortilla should have light brown spots. Repeat this process for each tortilla.
- 8
Keep Warm
As you cook the tortillas, stack them on a plate and cover with a clean kitchen towel to keep them warm.
