Prepare the Filling
In a skillet over medium heat, cook the chicken breast or ground beef until fully cooked. Drain excess fat if using ground beef.

Season the Meat
Add taco seasoning to the meat. If using chicken, shred it after cooking and mix well to combine with the seasoning.

Warm Tortillas
In a separate pan, warm the corn tortillas until pliable.

Assemble Tacos
On each tortilla, add a portion of the meat, followed by shredded lettuce, diced tomatoes, cheese, sour cream, and jalapeños as desired.

Rinse the Rice
Rinse the long grain white rice under cold water until the water runs clear.

Cook the Rice
In a pot, heat olive oil over medium heat. Add the rinsed rice and sauté for about 2 minutes. Then add chicken broth or water and salt. Bring to a boil, then reduce heat and cover. Cook for 15-20 minutes or until rice is tender and liquid is absorbed.
