Prepare the tortillas
Cut each corn tortilla into 6 equal triangles using a sharp knife or a pizza cutter.

Heat the oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Fry the chips
Carefully add a handful of tortilla triangles to the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy. Avoid overcrowding the pot.

Drain and season
Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while they are still hot.

Mix the salsa
In a medium bowl, combine the diced tomatoes, red onion, jalapeño, and chopped cilantro.

Add lime and salt
Stir in the lime juice and salt. Mix well to combine all ingredients.

Let it sit
Allow the salsa to sit for at least 15 minutes to let the flavors meld together before serving.
