Method

Chicken

  1. 1

    Prepare the Chicken

Pat the chicken breasts dry with a paper towel. This will help them sear better.

  2. 2

    Season the Chicken

In a bowl, mix the olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture all over the chicken breasts.

  3. 3

    Cook the Chicken

Heat a skillet over medium heat. Once hot, place the chicken breasts in the skillet. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

Rice

  1. 4

    Rinse the Rice

Rinse the long grain rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

  2. 5

    Cook the Rice

In a pot, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.

  3. 6

    Fluff the Rice

Remove the pot from heat and let it sit covered for 5 minutes. Then, fluff the rice with a fork.

Beans

  1. 7

    Prepare the Beans

Open the canned black beans and drain them. Rinse under cold water.

  2. 8

    Sauté Onion and Garlic

In a saucepan, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.

  3. 9

    Cook the Beans

Add the rinsed beans and cumin to the saucepan. Stir to combine and cook for an additional 5-7 minutes, until heated through. Season with salt and black pepper to taste.
