Taco Filling Preparation

Cook the Meat
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

Add the Chicken or Beef
Add the ground chicken or beef to the skillet and cook until browned, breaking it apart with a spatula as it cooks.

Season the Meat
Sprinkle the taco seasoning over the cooked meat and mix well. Continue cooking for an additional 3-5 minutes until the seasoning is well integrated.
Rice and Beans Preparation

Cook the Rice
In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the white rice, cumin, and salt. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.

Prepare the Beans
While the rice is cooking, rinse and drain the canned black beans. Add them to a small saucepan over low heat and warm them through. Season with pepper to taste.

Warm the Tortillas
In a dry skillet or directly over a flame, warm the corn tortillas for about 30 seconds on each side, until pliable.

Assemble the Tacos
On each tortilla, layer a generous spoonful of the meat filling, followed by shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream. Add sliced jalapeños if desired.

Serve the assembled tacos alongside the rice and beans for a complete meal.
