Preparation of Chicken Filling

Cook the Chicken
In a large pot, add the chicken breasts and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the chicken is cooked through and easily shredded.

Prepare Tortillas
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side to make them pliable.

Fill Tortillas
Take a tortilla and place about 1/4 cup of the chicken mixture in the center. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish. Repeat with remaining tortillas.

Add Sauce
Pour the green enchilada sauce evenly over the filled tortillas and sprinkle the remaining cheddar cheese on top.

Bake Enchiladas
Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes, or until the cheese is melted and bubbly.

Serve
Remove the enchiladas from the oven and let them cool for a few minutes. Serve topped with sour cream, shredded lettuce, and diced tomatoes as desired.
