Method
Preparing Carne Seca

Soak the Carne Seca
Place the dried beef in a large bowl and cover it with water. Let it soak for at least 8 hours or overnight to rehydrate.

Cook the Carne Seca
After soaking, drain and rinse the carne seca. Place it in a pot and cover it with fresh water. Bring to a boil, then reduce heat to low and simmer for about 1.5 hours, or until it is tender.
Making Red Chile Sauce

Prepare the Chile Peppers
Remove the stems and seeds from the dried red chiles. Place them in a dry skillet over medium heat and toast for a few minutes until fragrant, being careful not to burn them.

Cook the Sauce
Transfer the blended sauce to a saucepan and simmer over low heat for about 15 minutes, stirring occasionally.
Assembly and Serving

Combine and Serve
Once the carne seca is tender, shred it and mix it with the red chile sauce. Serve hot on a plate with optional garnishes of fresh cilantro and lime wedges.
