Preparation
1. Prepare the Beef
Trim any excess fat from the beef and cut it into thin strips, about 1/4 inch thick. This will help it dry more evenly.
2. Marinate the Beef
In a large bowl, combine the salt, garlic powder, black pepper, cumin, paprika, oregano, and chili powder. Mix well. Add the beef strips to the bowl and toss until all pieces are well coated in the spice mixture. Optionally, add lime juice for extra flavor.
3. Refrigerate
Cover the bowl with plastic wrap and refrigerate for at least 12 hours, but preferably 24 hours. This allows the beef to absorb the flavors.
Drying Process
4. Preheat the Oven
Preheat your oven to 170°F (75°C). If your oven has a dehydration setting, you can use that instead.
5. Prepare the Baking Sheet
Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
6. Arrange the Beef Strips
Remove the marinated beef from the refrigerator and lay the strips flat on the prepared baking sheet, ensuring they are not touching each other.
7. Dry the Beef
Place the baking sheet in the preheated oven. Leave the oven door slightly ajar to allow moisture to escape. Dry the beef for 6-8 hours, or until it is completely dry and has a leathery texture.
Storage
8. Cool and Store
Once dried, remove the beef from the oven and let it cool completely. Store the carne seca in an airtight container or vacuum-sealed bag in a cool, dry place.
9. Serve
Carne seca can be eaten as a snack, used in salads, or added to various dishes. If desired, serve with hot sauce to taste.
