Preparation

  1. 1

    Roasting the Peppers

Preheat the oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast in the oven for 15-20 minutes, turning occasionally until the skin is blistered and charred.

  2. 2

    Preparing the Filling

In a skillet over medium heat, cook the ground beef or turkey until browned. Add the chopped onion, minced garlic, cumin, salt, and black pepper. Cook until the onion is translucent. Remove from heat and mix in the shredded cheese.

Assembly

  1. 3

    Stuffing the Peppers

Remove the roasted peppers from the oven and let them cool slightly. Once cool, carefully peel off the charred skin. Cut a slit down the side of each pepper and remove any seeds. Stuff each pepper with the meat and cheese mixture.

Cooking

  1. 4

    Making the Sauce

In a saucepan, combine the tomato sauce, chili powder, oregano, and sugar. Simmer over medium heat for 10 minutes.

  2. 5

    Baking the Stuffed Peppers

Preheat the oven to 375°F (190°C). Pour the sauce over the stuffed peppers in a baking dish. Bake for 20-25 minutes until heated through and the cheese is melted.

Serving

  1. 6

    Garnishing

Serve the chile rellenos hot, drizzled with sour cream and sprinkled with chopped cilantro.
