Method

Panna Cotta Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder and water. Stir gently and let it sit for about 5-10 minutes, until it becomes thick and gelatinous.

    Combine Cream and Sugar

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring frequently until the sugar has dissolved completely and the mixture is hot, but not boiling.

    Add Vanilla and Gelatin

    Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin mixture until fully dissolved.

    Pour into Molds

    Pour the panna cotta mixture evenly into individual serving cups or molds. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Compote Preparation

    Cook the Berries

    In a small saucepan, add the mixed berries, granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes, stirring occasionally until the berries have softened and released their juices.

    Cool the Compote

    Remove the saucepan from heat and let the berry compote cool to room temperature. It will thicken slightly as it cools.

Serving

    Serve the Panna Cotta

    Once the panna cotta has set, carefully remove it from the molds if using. Top with the berry compote and serve chilled.
