Preparing the Steak

    Season the Steak

    Generously season both sides of the filet mignon with salt and black pepper.

    Sear the Steak

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the filet mignon and sear for 4-5 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before serving.

Making the Frites

    Cut the Potatoes

    Peel the russet potatoes and cut them into long, thin strips resembling fries.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the potato strips to the hot oil in batches. Fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

    Season the Frites

    While still hot, sprinkle the frites with salt to taste.

Preparing the Port Wine Mushroom Sauce

    Sauté Shallots and Garlic

    In the same skillet used for the steak, melt 2 tablespoons of butter over medium heat. Add the shallots and garlic, sautéing until softened, about 2-3 minutes.

    Cook the Mushrooms

    Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5-7 minutes.

    Add Port Wine and Season

    Pour in the port wine and bring to a simmer. Add thyme, salt, and black pepper. Cook until the sauce is reduced by half, about 5 minutes.
