Shrimp Mornay

    Prepare the Shrimp

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove from heat and set aside.

    Make the Cheese Sauce

    In a saucepan, melt the remaining 2 tablespoons of butter over medium heat. Stir in the flour and cook for 1-2 minutes until bubbly. Gradually whisk in the milk and continue to whisk until the mixture thickens, about 5-7 minutes.

    Add Cheese and Seasonings

    Remove the saucepan from heat and stir in the Gruyère and Parmesan cheeses until melted. Season with salt, black pepper, and nutmeg. Fold in the cooked shrimp and green onions.

Grit Sauce

    Cook the Grits

    In a pot, bring 4 cups of water to a boil. Stir in the grits and salt, reducing the heat to low. Cover and cook for about 20-25 minutes, stirring occasionally, until thickened.

    Finish the Grits

    Stir in 2 tablespoons of butter and pepper into the cooked grits until creamy and smooth.

    Mix the Cake Ingredients

    In a bowl, combine the bread crumbs, beaten eggs, chopped parsley, salt, and black pepper. Mix until well combined.

    Form and Cook the Cakes

    Shape the mixture into small patties. In the same skillet used for the shrimp, add a little oil and cook the cakes over medium heat until golden brown, about 3-4 minutes per side.
