In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes. This helps to tenderize the fish and adds flavor.

In a separate bowl, mix together the cornmeal, flour, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper.

Bread the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are evenly coated on both sides.

Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil, frying in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and place on paper towels to drain.
For the Tartar Sauce

In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Stir until well mixed.
