For the Grilled Gulf Fish

    Prepare the Marinade

    In a bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper.

    Marinate the Fish

    Place the Gulf fish fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Fish

    Remove the fish from the marinade and grill for about 4-5 minutes on each side, or until cooked through and flaky.

    Serve

    Remove grilled fish from the grill and serve immediately with a sprinkle of fresh parsley on top.

For the Seasonal Risotto

    Prepare the Broth

    In a saucepan, heat the vegetable broth over low heat and keep it warm.

    Sauté Onions and Garlic

    In a large pan, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute.

    Toast the Rice

    Add the Arborio rice to the pan and stir for about 2-3 minutes until the rice is lightly toasted.

    Add Wine

    Pour in the white wine and stir until it’s mostly absorbed by the rice.

    Cook the Risotto

    Begin adding the warm vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed. Continue this process for about 18-20 minutes until the rice is creamy and al dente.

    Add Vegetables

    In the last 5 minutes of cooking, add the chopped seasonal vegetables to the risotto and stir to combine.

    Finish the Risotto

    Once the rice is cooked, remove the pan from heat and stir in the remaining butter and grated Parmesan cheese. Season with salt and pepper to taste.

    Serve

    Serve the risotto immediately, topped with additional Parmesan cheese if desired.
