Method

Fried Green Tomatoes

    Slice the Tomatoes

    Wash and slice the green tomatoes into 1/2 inch thick slices.

    Prepare the Coating

    In one bowl, combine flour, salt, black pepper, and cayenne pepper. In another bowl, pour buttermilk, and in a third bowl, place cornmeal.

    Coat the Tomatoes

    Dip each tomato slice into the flour mixture, then into the buttermilk, and finally coat with cornmeal.

    Fry the Tomatoes

    In a large skillet, heat vegetable oil over medium heat. Fry the coated tomato slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Seared Grit Cakes

    Cook the Grits

    In a pot, bring water to a boil. Stir in grits, salt, and reduce heat to low. Cook until thickened, about 20 minutes, stirring occasionally.

    Add Butter and Crawfish

    Once grits are cooked, stir in butter and crawfish tails. Mix well and remove from heat.

    Cool and Shape the Grit Cakes

    Spread the grits mixture into a greased dish and let cool to room temperature. Once cooled, cut into squares.

    Fry the Grit Cakes

    Dredge each square in cornmeal and fry in vegetable oil over medium heat until golden brown, about 3-4 minutes per side.

Remoulade Sauce

    Mix Ingredients

    In a bowl, combine mayonnaise, Dijon mustard, hot sauce, minced garlic, paprika, lemon juice, and salt. Stir until well combined.

Hard-cooked Egg

    Boil the Eggs

    Place eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes. Drain and cool in ice water, then peel.
