Method

Burger Preparation

  1. 1

    Prepare the Beef Patties

In a bowl, season the ground beef with salt and divide it into two equal portions. Shape each portion into a patty, making a slight indentation in the center.

  2. 2

    Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy. Remove from the skillet and let drain on paper towels.

  3. 3

    Cook the Patties

In the same skillet with the bacon drippings, cook the beef patties for about 4-5 minutes on each side for medium-rare. Add a slice of Gruyère cheese on top of each patty during the last minute of cooking to melt.

  4. 4

    Toast the Buns

Lightly toast the brioche buns in the skillet for about 1-2 minutes until golden brown.

Onion Jam Preparation

  1. 5

    Sauté the Onions

In a saucepan, melt the butter over medium heat. Add the chopped onions and cook until softened and translucent, about 10 minutes.

  2. 6

    Add Sugar and Vinegar

Stir in the brown sugar, balsamic vinegar, and salt. Reduce heat to low and cook, stirring occasionally, until the mixture becomes thick and jam-like, about 20 minutes.

Fries Preparation

  1. 7

    Prepare the Potatoes

Peel and cut the potatoes into thin strips to create shoestring fries.

  2. 8

    Heat the Oil

In a deep pot, heat the vegetable oil to 350°F (175°C).

  3. 9

    Fry the Potatoes

Carefully add the potato strips to the hot oil in batches. Fry until golden and crispy, about 3-4 minutes. Remove and drain on paper towels, then season with salt to taste.

Assembly

  1. 10

    Assemble the Cheeseburgers

On the bottom half of each toasted brioche bun, layer the bacon, the melted beef patty with Gruyère, and a generous spoonful of onion jam. Top with the other half of the bun.

  2. 11

    Serve with Fries

Serve the Eliza Cheeseburger alongside a generous portion of shoestring fries.
