Method

Preparation of Filling

    Shred Duck Confit

    Remove the skin from the duck confit and shred the meat into small pieces.

    Prepare Aromatics

    Chop the green onions and mince the garlic cloves.

    Mix Filling

    In a large mixing bowl, combine the shredded duck confit, chopped green onions, minced garlic, soy sauce, sesame oil, and black pepper. Mix well until fully incorporated.

Assembly of Wontons

    Prepare Wonton Wrappers

    Take one wonton wrapper and place it on a clean surface. Spoon about 1 tablespoon of the duck confit filling into the center of the wrapper.

    Seal Wontons

    Moisten the edges of the wonton wrapper with a bit of water. Fold the wrapper over to create a triangle, pressing the edges to seal tightly. You can also fold the two corners of the triangle towards the center to form a pouch if desired.

    Repeat

    Repeat the process with the remaining wonton wrappers and filling until all are assembled.

Cooking Wontons

    Heat Oil

    In a deep frying pan or wok, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Wontons

    Carefully add the wontons to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy.

    Drain and Serve

    Using a slotted spoon, remove the wontons from the oil and drain on paper towels. Serve hot with hoisin sauce for dipping.
