For the Gumbo

    Prepare the Base

    In a large pot, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and celery, and sauté until softened, about 5 minutes.

    Add Garlic and Sausage

    Stir in the minced garlic and sliced Andouille sausage. Cook for an additional 2-3 minutes until the sausage is browned.

    Cook Chicken

    Add the boneless chicken thighs to the pot and cook for about 5-7 minutes until browned on all sides.

    Add Tomatoes and Broth

    Pour in the canned diced tomatoes and chicken broth. Stir well to combine.

    Season the Gumbo

    Add the Cajun seasoning, bay leaves, okra, salt, and black pepper. Bring the mixture to a boil.

    Simmer

    Reduce the heat to low and let the gumbo simmer for 30-40 minutes, stirring occasionally.

    Taste and Adjust Seasoning

    Taste the gumbo and adjust salt and pepper as needed before serving.

    Pop the Corn

    Pop the popcorn kernels using an air popper or on the stove until fully popped.

    Season the Popcorn

    In a large bowl, drizzle the melted butter over the popped popcorn and sprinkle the Cajun seasoning. Toss to coat evenly.

For the Roasted Rice

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Rinse the white rice under cold water until the water runs clear. Drain well.

    Roast the Rice

    In a baking dish, combine the rinsed rice with vegetable oil and salt. Bake in the preheated oven for 20-25 minutes until the rice is lightly golden, stirring halfway through.
