Prepare the Seafood

Marinate the Seafood
In a large bowl, combine the shrimp, catfish, and oysters. Pour in the buttermilk and let it marinate for at least 30 minutes.

In a separate bowl, mix together the cornmeal, all-purpose flour, baking powder, salt, black pepper, and cayenne pepper.

Cut and Soak Potatoes
Cut the potatoes into shoestrings and soak them in cold water for 30 minutes to remove excess starch.

Fry the Seafood

Coat the Seafood
Remove the seafood from the buttermilk marinade and coat them in the cornmeal mixture, pressing gently to adhere.

Fry the Seafood
In the same oil used for fries, fry the coated seafood in batches until golden brown and cooked through, about 3 to 4 minutes for shrimp and catfish, and 2 to 3 minutes for oysters. Drain on paper towels.
