Preparation of Cordial Base

Make the Simple Syrup
In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar has completely dissolved. Bring the mixture to a simmer, then remove from heat and let it cool.

Prepare the Fruit
While the syrup cools, wash and prepare your chosen fruit. If using cherries, pit them; if using citrus, peel and remove seeds. For berries, simply rinse them well.

Once the simple syrup is cool, add the prepared fruit and citric acid into the saucepan. Stir well to combine.

Cover the saucepan with a lid and let the mixture sit at room temperature for 24 hours, allowing the flavors to meld.

Strain the Mixture
After 24 hours, strain the mixture through a fine mesh sieve or cheesecloth into a clean container to remove the fruit solids.

Stir in the alcohol (vodka or brandy) to the strained liquid. If using, add the vanilla extract and any herbs for additional flavor.
