Crust Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the chilled, cubed butter and mix using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Form the Dough

    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Avoid overworking the dough.

    Chill the Dough

    Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Pre-bake the Crust

    Preheat the oven to 375°F (190°C). Roll out the dough on a lightly floured surface to fit your tart pan. Place the rolled dough into the pan, pressing it into the corners. Trim any excess dough. Prick the bottom with a fork and line with parchment paper. Fill with pie weights or dried beans.

    Bake the Crust

    Bake in the preheated oven for 15 minutes, then remove the weights and parchment and bake for an additional 10-15 minutes until golden brown. Remove from the oven and let cool.

Filling Preparation

    Melt the Chocolate

    In a heatproof bowl over a pot of simmering water, melt the chopped dark chocolate until smooth. Remove from heat and let it cool slightly.

    Prepare the Cream Mixture

    In a saucepan, heat the heavy cream and granulated sugar over medium heat until it just begins to simmer. Remove from heat.

    Combine Mixtures

    Gradually whisk the warm cream mixture into the melted chocolate until smooth. Incorporate the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and salt.

    Fill the Tart Shell

    Pour the chocolate filling into the cooled tart shell, smoothing the top with a spatula.

    Bake the Tart

    Bake in the oven at 350°F (175°C) for 20-25 minutes until the filling is set but still slightly wobbly in the center. Remove from the oven and let cool completely.
