Chicken Preparation

Flatten the Chicken
Place each chicken breast between two sheets of plastic wrap and pound it to about 1/2 inch thickness using a meat mallet or rolling pin.

Season the Chicken
Sprinkle both sides of the chicken breasts with salt and black pepper.

Cook the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let rest.
Vegetable Sauté

Sauté the Vegetables
In the same skillet, add 1 tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add Bell Peppers and Corn
Add the chopped bell peppers and corn to the skillet. Season with salt and black pepper to taste. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.

Finish the Dish
Stir in the chopped parsley and lemon juice. Cook for an additional 1-2 minutes. Serve the sautéed vegetables alongside the chicken paillard.
