Method

Chicken Liver Preparation

    Clean the Livers

    Rinse the chicken livers under cold water and pat them dry with paper towels. Trim any excess fat or connective tissue.

    Cook the Aromatics

    In a skillet, melt the butter over medium heat. Add the minced garlic and chopped shallots, cooking until softened and fragrant, about 3-4 minutes.

    Sauté the Livers

    Increase the heat to medium-high, add the chicken livers to the skillet, and season with salt, black pepper, and thyme. Cook for 5-7 minutes until browned but still slightly pink inside.

    Add Cream

    Reduce the heat to low and stir in the heavy cream. Cook for an additional 2-3 minutes until the mixture is creamy and heated through. Remove from heat and set aside.

    Combine Ingredients

    In a medium saucepan, combine the diced apples, brown sugar, white vinegar, chopped onion, grated ginger, cinnamon, salt, and peppercorns.

    Cook the Chutney

    Bring the mixture to a simmer over medium heat. Reduce to low and let it cook for about 30 minutes, stirring occasionally, until the apples are soft and the chutney has thickened.

    Cool and Store

    Remove from heat and allow the chutney to cool. Transfer to a jar and refrigerate until ready to use.

Sourdough Preparation

    Toast the Bread

    Drizzle the olive oil over both sides of the sourdough slices. Heat a skillet over medium heat and toast the slices until golden brown and crispy, about 2-3 minutes per side.
