Crust Preparation

    Preheat the oven

    Preheat your oven to 350°F (175°C).

    Mix the crust ingredients

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

    Press the crust into the pan

    Press the mixture firmly into the bottom of a 9-inch springform pan, ensuring it is evenly spread.

    Bake the crust

    Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while preparing the filling.

Filling Preparation

    Beat the cream cheese

    In a large mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy.

    Add sugar and other ingredients

    Gradually add granulated sugar, sour cream, vanilla extract, and flour, beating until well combined.

    Incorporate the eggs

    Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

    Pour filling into crust

    Pour the cream cheese filling over the cooled crust, smoothing the top with a spatula.

Baking

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. The edges should be firm.

    Cool and refrigerate

    Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour. Then, refrigerate for at least 4 hours, preferably overnight.

Topping (optional)

    Prepare the topping

    If desired, mix fresh berries with powdered sugar in a bowl. Let sit for about 10 minutes to release juices.

    Slice the cheesecake and top with the berry mixture just before serving.
