Preparation
- 1
Prepare the Cauliflower
Preheat your oven to 375°F (190°C). Cut the cauliflower head into florets and steam or boil in salted water for about 5-7 minutes until just tender. Drain and set aside.
- 2
Make Brown Butter
In a medium saucepan, melt the unsalted butter over medium heat. Continue to cook, stirring frequently, until it turns a golden brown color and has a nutty aroma. This should take about 5-7 minutes. Be careful not to burn it.
Assembly
- 3
Combine Ingredients
In a large mixing bowl, combine the steamed cauliflower florets, browned butter, salt, black pepper, and garlic powder. Toss gently to coat the cauliflower evenly.
- 4
Add Cheese
Stir in the shredded Gruyère cheese and half of the grated Parmesan cheese, mixing until the cauliflower is well coated with the cheese.
- 5
Prepare Breadcrumb Topping
In a separate bowl, mix together the breadcrumbs, chopped herbs, and the remaining Parmesan cheese. Drizzle a little melted butter (about 1-2 tablespoons) if desired for extra flavor.
Baking
- 6
Bake the Gratin
Transfer the cauliflower mixture to a greased baking dish and spread it out evenly. Sprinkle the breadcrumb mixture over the top. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.

Serve
Remove from the oven and let it cool for a few minutes before serving. Enjoy your delicious Cauliflower au Gratin!
