    Prepare the Pork Chops

    Start by seasoning the bone-in pork chops with salt, black pepper, and garlic powder on both sides.

    Sear the Pork Chops

    Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear them for about 4-5 minutes on each side until they are golden brown.

    Add Fresh Thyme

    During the last minute of cooking, sprinkle fresh thyme over the chops and allow it to infuse flavor.

    Rest the Chops

    Remove the pork chops from the skillet and let them rest on a plate while you prepare the stewed apple greens.

Stewed Apple Greens

    Sauté Onions and Garlic

    In the same skillet, add 1 tablespoon of olive oil and heat over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and sauté for an additional 1 minute.

    Stir in the diced apple and cook for another 2-3 minutes until the apple starts to soften.

    Add Greens and Broth

    Add the chopped kale or Swiss chard to the skillet along with the vegetable broth. Cook for about 5-7 minutes until the greens are wilted and tender.

    Season with salt, black pepper, and apple cider vinegar. Stir well to combine and cook for another minute.

    Serve the bone-in pork chops alongside the stewed apple greens for a hearty meal.
