Method

Pork Chops

    Prepare the Pork Chops

    Season the bone-in pork chops with salt and black pepper on both sides.

    Sear the Pork Chops

    In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until they develop a golden brown crust.

    Finish Cooking

    Reduce the heat to medium-low and cook the pork chops for an additional 5-7 minutes, or until they reach an internal temperature of 145°F (63°C). Remove from heat and let rest.

Apple Bourbon Glaze

    Prepare the Glaze

    In a saucepan over medium heat, combine apple cider, brown sugar, bourbon, Dijon mustard, and cinnamon. Stir to combine.

    Reduce the Glaze

    Bring the mixture to a simmer and cook for 10-15 minutes until it thickens slightly. Remove from heat and stir in butter until melted and smooth.

Stone Ground Grits

    Cook the Grits

    In a large pot, bring water and salt to a boil. Slowly whisk in the stone ground grits while reducing the heat to low.

    Cook the grits for about 20-25 minutes, stirring frequently, until they are thick and creamy.

    Finish the Grits

    Stir in milk and butter, and cook for an additional 5 minutes. Adjust seasoning with salt if necessary.

Stewed Greens

    Prepare the Greens

    Wash the collard greens thoroughly and chop them into bite-sized pieces.

    Sauté Aromatics

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Cook the Greens

    Add the chopped collard greens to the pot, then pour in the chicken broth. Bring to a simmer and cook for about 30 minutes, until the greens are tender. Season with salt and black pepper to taste.
