For the Blackened Catfish

Prepare the Spice Mixture
In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt. Set aside.

Season the Catfish
Pat the catfish fillets dry with paper towels. Rub both sides of each fillet generously with the spice mixture.

Cook the Meat
Add the ground beef or sausage to the pan. Cook until browned, breaking it up with a spoon as it cooks.

Add Garlic and Spices
Stir in the minced garlic, cayenne pepper, salt, black pepper, thyme, and bay leaf. Cook for another 1-2 minutes until fragrant.

Add Rice and Broth
Add the rice to the pan and stir to combine. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and let simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.

Fluff and Serve
Remove the bay leaf, fluff the rice with a fork, and serve alongside the blackened catfish.
