Marinade Preparation

    In a blender, combine the pineapple juice, adobo sauce, garlic, cumin, oregano, salt, black pepper, and lime juice. Blend until smooth.

    Cut the pork shoulder into small chunks and place it in a bowl. Pour the marinade over the pork, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 8-10 minutes per side, or until fully cooked and slightly charred. Let it rest for a few minutes before slicing thinly.

Taco Assembly

    Prepare the Tacos

    While the pork is resting, chop the pineapple and onion. Warm the corn tortillas in a dry skillet or microwave until pliable.

    On each tortilla, place a portion of the sliced pork, followed by chopped pineapple, diced onion, and fresh cilantro. Squeeze lime juice over the top to taste.
