After the dough has risen, roll it out into a rectangle about 1/2 inch thick. Place the chilled butter block in the center, folding the dough over the butter to encase it completely.

Incorporate Butter

Roll the dough into a long rectangle, then fold it into thirds (like a letter). Wrap it in plastic and refrigerate for 30 minutes.

Repeat the rolling and folding process two more times, refrigerating for 30 minutes between each fold.

Roll the final dough into a large rectangle and cut it into triangles. Starting from the base, roll each triangle tightly towards the tip.

Shape the Croissants

Place the shaped croissants on a baking sheet lined with parchment paper, cover with a kitchen towel, and let them rise for 1-2 hours until puffed.

In a small bowl, whisk together the egg and milk.

Preheat the oven to 400°F (200°C). Brush each croissant with the egg wash.

Using an espresso machine, brew two shots of espresso. Pour the espresso into a large coffee mug.

In a small saucepan or using a milk steamer, heat 1 cup of whole milk over medium heat. If using a saucepan, continually whisk the milk to create a frothy texture. Remove from heat when it reaches about 150°F (65°C).

Pour the steamed milk over the brewed espresso in the coffee mug. If desired, add 1 tablespoon of vanilla syrup for flavor.

Ensure your espresso machine is clean and ready to use. Fill the water reservoir with filtered water up to the recommended level.

Use a scale to measure 18 grams of freshly ground espresso coffee. The grind size should be fine, similar to table salt.

Place the ground coffee into the portafilter basket evenly. Use a tamper to compress the coffee grounds firmly and evenly to ensure proper extraction.
